It's been a long time since I have done a Cocktail of the Week article. With Covid-19, a strange work schedule, and other life issues, this article has been on the backburner. It's back now, however, and what better way to reinvigorate things than with one of my favorite tiki drinks of all time?
The Jungle Bird is one of my favorite tiki drinks because it's a little bitter, not too sweet, and full of flavor. It also strangely features Campari. The only experience a lot of people have with Campari is in a Negroni. Sure, it's a great bitter compliment to gin and vermouth, but it's useful for a lot more than one drink.
If you haven't experimented too much with Campari before, hopefully this gives you a new place to start. There's a wide world of cocktails out there and discovering new uses for ingredients is part of the adventure
Jungle Bird
Ingredients
1 ½ oz. Dark rum
¾ oz. Campari
1 ½ oz. Pineapple juice
½ oz. Lime juice
½ oz. Simple syrup
Instructions
Add all ingredients to a shaker with ice. Shake until chilled and strain into a rocks glass over ice. Garnish with pineapple fronds.
