I recently leafed through my copy of "I'm Just Here for the Drinks" by Amor y Amargo NYC owner, Sother Teague. With so many great ideas it was hard to pick one. Eventually I decided on this beauty, My Old Piano.
I loved the idea of Rye and Kummel together. Sort of a spicy, herbal concoction with enough fruity undertones to balance it out. Unfortunately, I didn't have Kummel. Assuming that since aquavit and Kummel were both caraway based that it would taste similar, I went ahead and made the substitution and thought I had an amazing drink on my hands.
Then I went to see Sother at Amor y Amargo and told him about his recipe I recently tried. He told me using aquavit instead of Kummel was like using grapefruit instead of oranges. He made me the correct drink and it made a huge difference. Moral of the story, listen to your bartender and Sother Teague knows his drinks.
MY OLD PIANO
Ingredients
1 ½ oz. rye whiskey
¼ oz. Kummel
¾ oz. Vida Mezcal
¾ oz. Carpano Antica
2 dashes apple bitters
Instructions
Combine ingredients in a mixing glass and fill with ice.
Stir well and strain into an Old Fashioned glass over ice.
