These are probably fighting words but I've never been a big fan of Pina Coladas. Not that they aren't good, but frozen drinks and coconut have never been on my favorites list. This made properly celebrating National Pina Colada Day difficult. So I did some digging for variations that could make me change my mind and found this one from The Ponte in LA. The Expat takes a traditional pina colada and shakes things up with fino and Oloroso sherry for sweetness and some Lazzaroni amaro to give it just a bit of bitterness. The result is a wonderful take on a classic that changed my mind about the pina colada. Now I'm a fan.
