Cocktail of the Week: Vieux Fumée


It's National Cognac Day which means it's time to get creative. Cognac is difficult to make new cocktails with because of its delicate flavor. For inspiration I turned to one of my favorite cocktails the Vieux Carre. The Vieux Carre is a New Orleans Classic known for its complex flavor and the use of benedictine and Peychaud's Bitters.


By itself, the Vieux Carre is amazing, but I wanted to accentuate the flavor of the cognac a little more while creating a different profile. To do this, I decided to add Cappelletti Amaro Sfumato for some smokiness and Madeira in place of the sweet vermouth. This adds some nuttiness and fruitiness that compliments the cognac well. This cocktail is complex, unique, and absolutely delicious.


VIEUX FUMÉE


Ingredients

1.75 oz. Cognac 0.75 oz. Madeira 0.25 oz. Benedictine

0.25 oz. Cappelletti Amaro Sfumato

2 dashes Peychaud's Bitters

2 dashes orange bitters


Instructions

Combine all ingredients in stirring glass over cracked ice and stir until chilled. fine strain into a chilled Nick & Nora glass and garnish with an orange peel.
